Watermelon-Jalapeno Daiquiri

It’s Friday. You’ve had a long week.

You deserve a cocktail.

Watermelon-Jalapeno Daiquiri

This one is perfect for a late summer evening. The watermelon is cool and crisp, yet the jalapeno warms your throat — and the booze warms you from the inside. Of course, if you’ve got tequila you can turn this into a margarita. Experimentation is encouraged! I’d love to see this with peaches, cukes, mango…

And with a good blender, you can puree the whole fruit — it’s practically a health food!

Use any fruit you’ve got, and any white/clear liquor you’d like. With the fiber and multiple servings of fruit (you could probably even slip in some veg if you’re feeling the urge and have a strong enough blender), this is basically a smoothie, but perfect for a Friday night on the patio. Serves 4.
  • about 4 cups of watermelon chunks and juice (I used half of a small watermelon)
  • half a jalapeno, seeds and ribs removed
  • zest and juice of one lime
  • pinch of salt
  • 4 cups ice
  • 1 shot triple sec
  • 4 shots(ish) rum

Combine all ingredients in a blender and blend until frothy, icy, and smooth.
